Hot cherry peppers makes this dish extra special. My favorite brand is B&G, gluten free and so good . They have just right amout of spice and vinegar. If you love spicy these are yummy.

2 Double cut pork chops

2 Large orange bell peppers

2 large yellow bell peppers

2 Green Italian frying peppers

2 cloves garlic minced

Sprig of sage 

Tsp ground coriander

1/4  cup red wine vinegar 

Sea salt/pepper  and  extra virgin olive oil

add 1 cup hot cherry peppers for spicy variety 

 

 

Place deep scores on chops, salt/pepper then place some minced garlic into the scores.  Sprinkle remaining garlic into pan. 

Cut up peppers and place over chops. Sprinkle in the coriander, toss in torn sage and drizzle olive oil all over everything. 

Add hot cherry peppers if using them.   

Cook 400 degrees till 140-160 internal tempature recommended for pork.
