Cucumber, radish, fennel, sea salt and apple cider vinegar…done!

Slice  1/2 English cucumber, 5 or 6 radishes, 1/4 small fennel bulb on a mandoline slicer. Shreds some fronds from the fennel and sprinkle on top. Season with pink Himalayan sea salt and 2 tablespoons of apple cider vinegar.

That’s it!  Crispy , refreshing, antioxidant good for you salad.  Add in Tuna, smoked Salmon or even citrus like blood orange or grapefruit for a quick and easy lunch that won’t derail those  healthy eating habits you try so hard to maintain.

This one should appeal to those hard to please guest too. It’s vegan, gluten-free, dairy free, peanut free light and delicious.
