Got the chicken blahs…here’s a chicken supper fixer.                                                                                             Smashed cannellini beans with sun dried tomato chicken.

We can all roast chicken breast, no secret recipe here. I season the chicken well with sea salt cracked pepper and drizzle some olive oil before roasting. There’s the blah  part. We all eat this routinely there’s nothing wrong with it except that IT’S BORING.

ingredients:

2 organic chicken breasts

1 can cannellini beans (rinsed)

1/4 lemon

1 clove garlic minced

handful parsley

1/2 cup sun dried tomatoes

Olive oil

To make plain chicken special pan roast some sliced sun dried tomatoes in olive oil. Don’t buy them already in olive oil. In another pan heat cannellini beans (also called white beans) with a small amount of minced garlic, squeeze of lemon, season with sea salt and cracked pepper. After it is heated smash with a fork adding more olive oil and smashing until you have a rustic chunky but blended appearance. Stir in fresh chopped parsley.

Plate this fancied up chicken by scooping out the cannellini bean smash place roasted chicken over that and pour the sautéed sun dried tomatoes over the top. Drizzle the plate with olive oil.  Now, don’t be stingy here buy a good organic first cold press extra virgin olive oil. It’s super delicious and good for you. This cannellini bean smash is something I love to make and eat. I like it warm or cold as a dip. It’s a great meal anchor adding protein and fiber without bad fats and sugars.

Another great meal idea using the cannellini bean smash would be to plate the bean smash. Then pile up some organic arugula over it and place a piece of grilled fish like red snapper on top of everything. I don’t get tired of this bean smash.

Chill it and use it as dip for fresh veggies. Just blend it smoother for a more dip consistency. Enjoy it !
