This chili has colorful peppers and white beans. I use ground mix of veal, pork and beef. My version leaves out onions since it’s such a high fodmap food that triggers so many us to experience bloat and Ibs symptoms. But onions add that something a little sweet.  Instead I used chopped carrots which not only add some sweetness but more colors and texture too.

Brown ground meat, season with sea salt and cracked pepper.

Saute carrots, peppers (I used green, orange and yellow), a whole garlic clove which I remove after saluting, sea salt and cracked pepper. Add in white beans, I use canned but rinse before using.

Bring meat back to the pot. Add in I large can of crushed tomatoes.

Season with a 1 teaspoon of cumin and 3 tablespoons or more chili powder.

To spice it up use a small jalapeño minced when sauteing  the vegetables. Ok I use two.
